Low Carb Green Bean Casserole

 

 

 

 

 

 

 

 

Green Bean Casserole

28 ounce can of green beans

1/2 of a small onion, diced

2 slices of thick bacon

8 ounces softened cream cheese

1/2 cup chicken broth

parmesan cheese

fried onions (optional)

Preheat oven to 350 degrees. Spray a 2 quart casserole dish with non-stick spray.

Heat a 12 inch skillet over medium heat. Chop bacon and fry until crisp. Remove bacon from pan and reserve the grease. Add onion and sautee for about 5 minutes. Add cream cheese and chicken broth. Heat and stir this mixture until smooth. Add green beans to pan and mix well. Pour green bean mixture into casserole dish. Top with parmesan cheese and bacon. You can also add a few tablespoons of fried onions as a garnish if you like.

Bake for 25 minutes, or until brown and bubbly.

Serves 8: NET carbs 3 per serving without fried onions

  1. How many servings are there in this recipe? I don’t see that in a lot of your very delicious looking recipes. I am excited to try them.

    1. Sorry about that! Sometimes I’m in too much of a hurry. Bake it about 25 minutes. You just need to get it hot and let the top brown.

  2. Hi, I have a quick question. So once you put everything into the casserole dish and top w/ the cheese and bacon, you put into the oven? For about how long? Since everything is cooked, I’m assuming it’s just to bring the flavors together and melt the cheese? Thanks for posting this! Can’t wait to try it.
