Cheesy Chicken and Spinach Casserole


4 large chicken breasts, cooked and shredded

8 ounces softened cream cheese

3/4 cup mayonnaise

3/4 cup sour cream

8 ounces shredded pepper jack cheese

9 ounces chopped spinach, cooked and drained

1 package Knorr vegetable recipe mix

1/2 cup colby jack cheese

Preheat oven to 350 degrees. Mix all ingredients except the colby jack in a large mixing bowl. Place the mixture in a 9 X 13 pan sprayed with non-stick cooking oil. Top with colby jack cheese. Bake for 30 minutes.

Serves 12: 5 Net carbs per serving

  1. Welcome back, I’ve been stalking your recipes for about a year now. I especially like your garlic/cheddar/biscuit. I took a few days off of the keto lifestyle to what I thought was going to be freedom from planning and cooking and ended up sick. Really it is not worth my health to jump out of the keto way of life. Thank you for your help in staying there.

    1. I’ve never measured it that way. While it’s still in the pan, I sort of score it. On the long side I make 4 cuts across, and on the short side I make 3 cuts all the way across. That way I can cut a “square” and know I’ve got a serving size. I hope that makes sense!

  2. This was delicious! This is the first recipe I have made from your website. I will be trying many more! Could you recommend a substitution for the Knorr mix? I don’t like using things with MSG in them if it can be avoided. Thanks for posting this recipe!

    1. The more I read, the more I agree with you that the Knorr should be replaced. I’m not sure what to replace it with yet, but I’ll try to work on it!

      1. Can you get Marigold bouillon powder or Kallo stock cubes in the US? I would try these as they are pretty clean

  3. I just made this tonight and it was AMAZING. The kids loved it and ate every bite. I don’t even know what that Knorr stuff is, so I just added some celery seed, a little celery salt, granulated onion and black pepper. So great. This is now going to be a staple in my recipes. Thanks so much!

  5. This is absolutely delicious. Delicious does not even adquadetly describe this dish. I did not use the veggie packet but used onion bits, paprika, garlic salt, salt and pepper in its place. No pepper jack cheese either so used Colby and Monterey jack. Definitely a keeper!! Thank you!

  6. My husband thought this was way too salty…which made me sad because I followed the recipe exactly. I thought it tasted more like a dip than a stand alone casserole. I won’t be making this again.

  9. Made this according to recipe. Delicious. Whole family loved! I will add chopped water chestnuts next time just for a change. Also think chopped cooked cauliflower would be good added with or in place of chicken fir a vegetarian twist.

  10. This dish was DELICIOUS! I tried this when a friend at work made the recipe. I made a vegetarian version using steamed broccoli in place of the chicken, and I thought it was quite good. I LOVE this site!
